- Peel all the apples.
- Drizzle with lemon juice to prevent browning.
- Remove the cores.
- Cut each apple into quarters.
- Slice each quarter thinly.
- Lightly flour the work surface.
- Roll the pastry into a circle large enough for a 20–22 cm tart pan.
- Transfer it to the pan.
- Press gently into the edges.
- Trim any excess pastry.
- Prick the base several times with a fork.
- Whisk together the eggs, egg yolk, sugar, cream, and vanilla.
- Mix until smooth.
- Refrigerate for about 10 minutes.
- Arrange the apple slices in overlapping circles.
- Slowly pour the custard over the apples.
- Preheat the oven to 180°C (350°F).
- Bake for 35 minutes or until the custard is set and lightly golden.
- Cool for 10 minutes before removing from the pan.
- Dust with icing sugar if desired.
- Slice and serve warm or at room temperature.
- Pair with whipped cream or vanilla ice cream.
