The Origins of Sushi

Sushi has evolved over centuries, beginning as a method of preserving fish in fermented rice in ancient Southeast Asia. Over time, it transformed in Japan into the vinegared rice-based dish we know today. Maki Sushi (巻き寿司)—meaning “rolled sushi”—emerged during the Edo period, popularized as a fast, portable meal.

While there are many styles of sushi, Maki is perfect for home chefs because it’s fun to make, easy to customize, and doesn’t require raw fish to be delicious.

For the rolls:

  • 4 sheets nori (seaweed)
  • 1 small cucumber, julienned
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 100g (3.5 oz) cooked crab sticks or smoked salmon (or tofu for vegan version)
  • Pickled radish or cream cheese (optional)

To serve:

  • Soy sauce
  • Pickled ginger
  • Wasabi
  • Bamboo sushi mat (makisu), plastic-wrapped

Instructions

  1. Make the Sushi Rice
    Rinse the rice under cold water until clear. Cook with water using a rice cooker or stovetop. While still warm, gently mix in rice vinegar, sugar, and salt. Let it cool to room temperature.
  2. Prep the Fillings
    Slice all vegetables and proteins into thin, uniform strips. Have everything ready and arranged neatly.
  3. Roll the Sushi
    Place a sheet of nori shiny-side down on your bamboo mat. Wet your fingers and gently spread a thin layer of rice, leaving 1 inch uncovered at the top. Lay fillings horizontally about one-third of the way up.
  4. Roll It Up
    Using the mat, roll the sushi away from you, pressing gently but firmly to shape. Seal the edge with a bit of water. Let rest seam-side down for 2 minutes.
  5. Slice and Serve
    Use a very sharp knife dipped in water to slice into 6–8 pieces. Serve with soy sauce, wasabi, and pickled ginger.

Tips for Success

  • Don’t overfill—less is more for tight rolls.
  • Use real sushi rice—other types won’t give the same texture.
  • Keep your hands wet to prevent rice from sticking.
