Ingredients
  

Chicken Stock
  • 1 whole chicken
  • Water
  • 2 chicken bouillon cubes
  • 1 tbsp curry powder
  • 1 tsp thyme
  • 1 onion
  • Salt adjust to taste
Fried Rice
  • 4 cups parboiled rice
  • 2 cups mixed vegetables
  • 1 diced red bell pepper
  • 1 diced onion
  • 2 tbsp vegetable oil
  • 1 tbsp butter (optional)
  • 1 tsp curry powder
  • ½ tsp thyme
  • salt adjust to taste
  • Black pepper
Optional
  • Fried shrimp
  • Fried chicken
  • Fried beef liver

Equipment

  • 1 Large cooking pot
  • 1 Medium saucepan
  • 1 Large frying pan or wok
  • 1 Fine mesh strainer
  • 1 Cutting board
  • 1 Sharp knife
  • 1 Wooden spoon
  • 1 Measuring cups
  • 1 Measuring spoons

Method
 

Prepare the Chicken
  1. Place the chicken in a large pot and cover with water.
  2. Add onion, curry powder, thyme, bouillon cubes, and salt.
  3. Cook until the chicken is fully cooked.
  4. Remove the chicken and strain the broth.
Cook the Rice
  1. Rinse the rice.
  2. Cook it in the chicken stock until tender
  3. Allow it to cool.
Fry the Vegetables
  1. Heat the oil.
  2. Cook the onions and vegetables.
  3. Season lightly.
Combine
  1. Add the rice.
  2. Mix gently.
  3. Add butter and optional proteins.
  4. Cook another 4–5 minutes.

Notes

Tips

  • Use parboiled rice.
  • Don't overcook the vegetables.
  • Chicken stock makes all the difference.
  • Cool the rice before frying.
  • Golden Sella Basmati works wonderfully.
